Mexican Filler Ingredients :
Boiled Kidney Beans - 1/2 cup
Boiled Sweet Corn - 1/4 cup
Chopped Green Capsicums - 1/4 Cup
Chopped Red Capsicums - 1/4 Cup
Chopped Tomato - 1/4 Cup
Salsa -
Jalapeño, fine chopped : 2 tbsp (1 no)
Green olives, fine chopped : 1 tsp (2 no’s)
Tomato ketchup : 4-5 tbsp
Eggless Mayonnaise – 1 tbsp
Sweet chilli sauce : 1 tsp
Red Chilli Flakes - 1/4 Tsp
Salt - 1/2 Tsp (as per taste)
Lime Juice - 1Tbsp
White pepper-1 tsp
Topping:
Cheese : small pieces to keep on top.
Method:
In a bowl and put the prepared Vegetables Mix all ingredients for Salsa, leave for 10 minutes..
Get canapés ready for serving, keep cheese cut or grated as you please at hand.
Mix the boiled corn and beans into the salsa, give a quick toss and portion into the waiting canapé shells, put a piece of cheese .
Bake in oven until the cheese melts and serve them warm.
