Orange peels are an excellent source of Vitamin C and have many
medicinal properties. . So I prepared this recipe by using the skin of orange.
. the main ingredient here is the peels of an orange. The unique combination of
orange and tamarind gives such a nice flavor to this pachadi. The bitterness of
the peels, the tanginess of the tamarind, the spiciness of the chillies and the
sweetness of the jaggery gaves unique
taste.It goes well with curd rice, chapathi, idli& dosa.
Ingredients:
Orange Peel -1cup
Tamarind - a
lemon-sized ball
Green chillies – 3
Red chillie– 1
Fresh ginger– 1 tsp
Hing – 1 pinch
Mustard seeds – 1/2tsp
Fenugreek seeds – 1/4 tsp
Channadal – 1 tblsp
Salt -as per taste
Sambar powder – 1 tsps
Turmeric powder- 1/4 tsp
Jaggery – 2 to 3 tbsps
Curry leaves – a few
Seasame Oil – 2 tblsp
Method:
1.Soak tamarind for 10 minutes, and then extract 1 cup of
juice and keep aside.
2.Heat oil in a pan and add mustard seeds ,Fenugreek seed and
bengal gram dhal s ,allow to splutter.
3.Then Add hing, red chillies, green chillies and the ginger
and fry for few seconds.
4.Now add the chopped orange peels and the curry leaves and
sautéin low flame for 2 min.
5.Finally add tamarind water salt, turmeric powder, and sambar
powder and cook on low heat till oranges are cooked.
6.Now add the jaggery
and mix well. Cook this till the pachadi would have thickened.
7.Remove from heat. Now Pachadi is Ready to serve.
