VEGETABLE MAKHANWALA


My children likes paneer dishes very much. I love making new dishes especially for them. So I tried VEGETABLE MAKHANWALA. It’s a very popular traditional dish in Northern India. Makhanwala usually refers to a creamy gravy curry from North Indian cuisine. This is a near perfect party dish. Not too spicy, Perfect with rotis ,pulao or naan. While surfing for this recipe I found a few variations of the masala by different bloggers. I made it in my own version .It tasted yum finally :)
Ingredients:
Beans-1/2 Cup
Carrots-1/2 Cup
Green Peas-1/2 Cup
Baby Corn-1/2 Cup
Cauliflower florets-1/2 Cup
Onions, Sliced-1/2 Cup
Small Piece Ginger
3 Large tomatoes
1/4 tsp -Turmeric Powder
1 tsp -Chilli powder
1/2 tsp -Cumin seeds
Cinnoman, cloves, garlic-1 tsp
Cream-4 tsp
Butter-4 tsp
Salt to taste
Red chilli paste -1/2 tsp
Tomato ketchup -1tbsp
Cottage cheese (paneer) -100 grams
Tomato puree, boiled-1 cup-
Fresh coriander leaves - a few sprig
For the Garnish
Chopped Coriander-1 tsp
Butter-1 tsp
Method:
Boil a  the tomatoes for one minute. Remove, de-skin and deseed tomatoes and chop finely. Keep aside.
Boil cauliflower florets with a pinch of turmeric powder. Drain and keep aside.

Heat the butter in a pan, add cloves, cinnamon, cardamoms  red chillies.  cumin seeds and chopped garlic. Combine with the onions, ginger, garlic, tomatoes, turmeric and chilli powder.
As they begin to change colour, add green peas, French beans, carrots, corn, potatoes
When these are half done add cauliflower, capsicum and salt to taste. Cover and cook on low heat.
 When vegetables are done add, fresh red chilli paste and tomato ketchup. Stir well. Add boiled tomato puree and paneer cubes and saute for a minute. Cover and cook for 5 minutes.
Add fresh cream and  Serve hot garnished with the coriander.
